20's Hideout Steakhouse launches farm to table program

MARION -- A local business owner is expanding the menu options at his restaurant with a new farm to table program.

Jeff Diederich, the owner of 20's Hideout Steakhouse, is following an industry trend and bringing new steak to the table from his own 130-acre farm in Marion, Diederich Farms.

20's Hideout, which has been around since the 1990s, uses USDA processed black Angus beef from the family-owned proprietary farm for their daily specials.

"This product may not be for everybody," said Diederich. "It does come with a slightly higher cost because there is so much labor involved in producing the product."

The owner said he's definitely not saving money with the production, but adds it's worth it. 

The specials could cost a few more dollars than standard steaks on the menu.

"When you want to get to an elevated quality level, that comes with an increased cost," said Diederich. 

The Marion-native says within the next two months, they'll also offer butter made with honey from their farm.

That's where you'll find 11 beehives, with as many as 200,000 bees.

"We haven't had that in Southern Illinois," said Diederich. "We've been very limited by the opportunity to provide that. Somebody had to step up and we're glad to at least be one of the first in the area to do that."

Managers tell News 3 that pretty soon, steak won't be the only special offered on the menu. Next spring, they'll offer lamb on the menu as well.
