Restaurant Report Card: Dec. 9, 2013
WSIL -- Qin Guan in Carbondale got a 78 when the health department visited two weeks ago.
Most of the deductions were for cleaning problems, but the inspector did find two critical violations. The dish machine wasn't sanitizing correctly, and the inside was dirty. Plus, the restaurant was cited for not following proper cooling procedures. Labels on the crab rangoon weren't consistent.
The knives had dried food on them and had to be re-washed along with bowls, strainers, pans, the meat grinder, the slicer, utensils, and equipment on the wok line. Food in the refrigerator wasn't covered and neither were some spices.
The report noted all the hot foods on the buffet were in the correct temperature range
When the inspector followed up the next day, the problem with the dish machine had been fixed. The manager says he was not in town when the inspection was done, and quickly returned to correct all the problems.
It was an 86 for the Carbondale Steak N Shake. Struggles with food temperature cost the restaurant five points. Sausage patties, beef stew, and egg product all had to be thrown away.
Several spots needed to be cleaned including the milk and cup dispensers, areas of the floor, the milk shake machine, shelves in the walk-in cooler, and the ceiling were all dirty.
Additionally, the hot water in the men's bathroom was too hot.
Citing "inconsistent cleaning practices," the health department put Steak N Shake on a monthly inspection schedule and made two follow up visits in as many weeks to ensure the violations were corrected.
In Mt. Vernon, Buffalo Wild Wings earned a 91 on its most recent check.
No sanitizer in the dish machine was the only critical violation. There was water pooling on the floor near a cooler, and the restaurant was docked for using a plastic cup instead of an approved scoop in the ice.
The issues were corrected within a week.
A 94 puts Boondock's in Carbondale next on the list. This inspection boasts a nearly 20 point improvement from when the restaurant was featured August.
There were zero critical violations here, but Boondocks needed a manger certified in food handling safety and thermometers to check cooking temps.
And topping the Report Card this week, Waltonville Café in Waltonville with a 96.
